Bake Healthy ANZAC Cookies

Directions:

  1. Preheat oven to 150 degrees
  2. Combine coconut, flour, nuts, oats and mixed spice in a bowl and set aside.
  3. Gently melt butter, rice malt syrup and vanilla until the mixture starts to bubble
  4. Remove from heat and add salt.
  5. Mix bicarbonate of soda with boiling water in a small bowl and stir through melted butter mix until foaming.
  6. Mix dry ingredients from Step 2 into the melted butter mix.
  7. Using slightly damp hands, roll teaspoons of mixture into balls and place on a greased and lined tray.  Flatten into a round disc using the palm of your hands.
  8. Cook in the middle of the oven for 15 minutes or golden brown (they should be still soft to touch)
  9. Cool on tray and then transfer to a wire rack
  10. Enjoy with some fresh fruit for a tasty afternoon tea!
